Cooking to Live or Living to Cook: Bruce's Campfire Biscuits

I broke out a recipe I recently learned from Bruce Mitchell ofSwamp People. We cooked all kinds of food in his front yard.  He's like me when it comes to good food, he can eat! This recipe is quick and easy. It also reminds me of when I was a kid. Maw-maw Fotnot used to cook biscuits every Sunday morning.  I remember dipping them in coffee before taking a bite.

INGREDIENTS

1/2 cup butter

2 1/4 cups pioneer biscuit mix

2/3 cup milk

1/4 cup additional butter for top of biscuits

DIRECTIONS

Grease and heat a 12" Dutch Oven with eight charcoal briquettes on bottom and approximately 17 briquette coals on top.  Mix all ingredients, leaving out 1/4 cup additional butter.   Knead until smooth.  Flatten dough ball on wax paper until about 3/4 inch thick.  Punch out biscuits with cutter, we used a empty rotel tomato can.  Place biscuits into pot.  Bake for approximately 12-15 minutes.  Be sure to rotate lid for even cooking.  When done, brush tops with butter.
