Doritos Casserole

I picked up this recipe from Cindy, a co-worker of mine, a single mom raising two daughters. When you work all day gourmet is not in your vocabulary, but good, quick and easy are. So working moms and dads, this one's for you.

Ingredients:

1 family pack ground meat

1 can cream of chicken

1 can cream of mushroom

1 can red enchilada sauce

1 large bag of Doritos

1 16 oz. bag of your favorite shredded cheese

Directions:

In a medium sauce pan, brown ground meat and drain. Preheat oven to 350 degrees. Return pan to stove On medium heat add cream of chicken and mushroom. Also add enchilada sauce. Cook for 15 minutes. In a 9x15 baking pan crumble Doritos on bottom. Pour and layer ground meat sauce over Doritos. Cover with cheese and bake for 20 minutes. Quick and good Doritos may be substituted with cooked tater tots.
