Cooking to Live or Living to Cook: Onion Soup

As for back as I can remember, when you went to a restaurant, the first thing they served was onion soup.  I remember looking forward to that bowl of soup.  The one that pops into mind is Mecca Inn restaurant.  That was the place to go for homecoming and prom.  Here’s the recipe I pulled out. Try this one.

Ingredients:

2 tbls butter

6 large onions, thinly sliced

7 cups chicken broth

3 tbls sherry

Salt and pepper to taste

6 to 8 buttered, toasted French Bread rounds

Parmesan cheese, grated

Directions:

In a large pot melt butter.  Add onions and sauté slowly until golden brown, stirring often.  Gradually stir in chicken broth, add sherry and salt and pepper.  Cover pot tightly and simmer 30 minutes.  Pour into individual oven proof bowls. Place slice of toast on soup, buttered side up.  Spread heavily with grated cheese dotting on top with butter.  Place under broiler about 1 minute or until cheese is golden brown.  Enjoy and think about the good ole days.
